Bread Baking Glossary - Spelt, Durum, Kamut, Flour

What Is Spelt?

Spelt is often called the biblical wheat. And many people who have a wheat allergy and avoid eating wheat (which is not the same as Celiac disease) find spelt does not affect them in a negative manner. In fact, spelt is an early variety of wheat and underwent a spontaneous mutation. Technically speaking, spelt is hulled wheat, which means that the extra hull has to be milled off before the wheat can be milled into flour. Spelt bread is not easy to bake, and the same mutation that lost the hull changed the balance of the gluten proteins to create a grain and flour that was preferred by bakers. This is wheat as most of us know it. Since proteins are the usual culprits in allergies, I would assume that the mutation that improved the bake-ability of the wheat also made it more difficult to digest. Because of the difficulties of baking, spelt almost disappeared from the agricultural scene, but fortunately has made a strong return. Dr. Kracker uses spelt flour extensively to bake its flatbreads. To bake with spelt, try using the biga for best results. The weaker spelt proteins like the extra organic acids developed with the preferment.

What Is Durum Wheat?

Durum is yet another variety of wheat that is known for its large kernels and high protein content. Most all of the durum wheat in the US is milled into semolina flour, the basis of pasta and macaroni. When added to bread, semolina flour imparts a rich yellow color and a buttery flavor. Most all recipes combine semolina with regular bread flour for the best results.

What Is Kamut?

Kamut is one of the durum wheats and is known for its sweeter flavor (it is amber rather than red wheat) and the large size of its kernels. Kamut is the Egyptian word for wheat, and the initial seeds were carried to the US as a curiosity from Egypt. Today, most all of the kamut in the US is grown in Montana. Like spelt, Kamut does not have ideal baking characteristics, but can be combined with wheat flour. I like to cook Kamut--or spelt for that matter--- as a rice substitute or together with rice, and Kamut can be precooked and added to the dough. The large plump kernels make for a fantastically chewy texture.

All-Purpose Or Bread Flour?

Bread flour for the home baker is milled from hard winter wheat. If you want to bake with preferments and use long fermentation, always look for bread flour. All-purpose flour is milled from softer wheat varieties which have less protein and whose protein is better suited for cakes and cookies. You would not want the tough, chewy texture of sourdough bread to characterize your cookies! Flour is labeled specifically for bread baking or all-purpose baking.

If You're Dieting, Choose Rye Toast For Breakfast

If you're trying to avoid mid-morning snacks that sabotage your weight-loss plan, try exchanging your wheat toast for rye toast - or choose a rye-based cereal instead.

Researchers at the Swedish University of Agricultural Sciences have found that eating rye bread at breakfast suppressed appetite for the next 3 hours. The tests were done with a "normal" breakfast, but with the substitution of rye bread for wheat bread. Caloric intake with the rye breakfast corresponded to caloric intake with a similar wheat breakfast.

In the test, it didn't matter if the breads were made from rye bran or from sifted rye flour. Nor did the amount of rye seem to matter. Different breads gave between 5 and 8 grams of rye per breakfast, but all formulas gave the same result: A lasting decrease in hunger and the desire to eat.

In addition, the effects seemed to last into the afternoon. When subjects ate a "normal" lunch they didn't experience the normal mid-afternoon hunger pangs.

Researchers haven't yet determined the reason for this effect, but my guess is that they're trying to figure it out. Meanwhile, it could be seen as somewhat of a miracle for the millions of Americans who want to lose weight, but who don't want to take pharmaceutical drugs and are unable or unwilling to force themselves into a closely regimented diet.

If the simple exchange of rye bread for wheat bread with breakfast can prevent dieters from mid-morning and mid-afternoon snacking, the weight loss industry just might not want overweight people to find out.

This discovery could present a serious threat to the multi-billion dollar weight-loss industry.

On top of that, it could cause dieters to be healthier!

Delicious Nutritious Bread Machine Recipes

Best Whole Wheat Bread Recipe

For good health it is best to have as much whole wheat in bread as you can. This recipe has at least 90% whole wheat. Try it out. It will rise nicely and have a great texture and flavor.

Wheat Bread

Make sure the paddles in the pan are in the correct orientation (usually in the same direction if you have two paddles.)

It really is best to use a kitchen scale for accurate measurement. You will have better results.

Place 340 grams of pure water into the bread machine pan.
Add about 1 Tablespoon of butter, cut into two pieces.

Next measure into a bowl the following ingredients:
50 grams of nuts or seeds. (You may use cracked wheat in place of seeds. If you do so, add this to the water so it can soak, and program for a delayed bake by at least 5 hours.)
50 grams of bread flour
200 grams of whole wheat flour
200 grams of white whole wheat flour (it is less bitter than whole wheat)
40 grams of white sugar
20 grams of powdered buttermilk
10 grams of powdered malt
10 grams of kosher salt
Stir these ingredients, then add to the water in the pan.

Make a small indent in the dry ingredient mix and place in it 2 1/4 teaspoons of active dry (not rapid) yeast. You may use a type of yeast designed for a quick-rise; if you do, make sure to set your bread maker appropriately.

Yield: one 1.5 lb. loaf

For a really fine bread, prepare this in the evening and set your bread machine to have the bread ready for breakfast. Again, this bread will rise nicely and the taste will be fantastic.

High Rise 100% Whole Wheat Bread

Settings to use: Light Crust, Whole Wheat

Put 355 grams of water in the bread machine pan.

Add 1 Tablespoon butter, cut into 2 pieces.

Stir the following ingredients together, including the yeast if you are making the bread right away. Otherwise, place the yeast in a well on top of the dry ingredients.

250 grams white whole wheat flour
250 grams whole wheat flour
40 grams white sugar
20 grams powdered buttermilk
10 grams kosher salt
8 grams (2 1/4 teaspoons) active dry yeast

Makes one 1.5 lb. loaf

Cracked Wheat & Wheat Germ Bread

Whole Wheat (mostly) Bread

This bread has a full wheat flavor with a firm crust to hold all that great flavor in.

360 grams water
1 Tablespoon butter (cut into 2 pieces)
70 grams cracked wheat
30 grams wheat germ

100 grams bread flour
150 grams white whole wheat flour
150 grams whole wheat flour
40 grams white sugar
20 grams powdered buttermilk
10 grams kosher salt
8 grams (2 1/4 teaspoons) active dry yeast

Put the first 4 ingredients into the bread machine pan and swish.

Put all the other ingredients, except the yeast, into a bowl. Stir, then pour into the bread machine pan. Make a well in the top of the dry ingredients and add the yeast. If you do not want to delay the baking, mix the yeast in with the dry ingredients.

Bread machine settings: light crust, whole wheat.

Yield: one 1.5 lb. loaf

Almond and Cherry Bread

This is a good-tasting bread, not too sweet. Great as a breakfast bread!

Put in the bread machine pan:
283 grams milk
2 large eggs
3 grams almond extract

Add in the dry ingredients:
510 grams bread flour
26 grams white sugar
12 grams salt
28 grams butter
75 grams slivered almonds
6 grams active dry yeast

Again, if you do not make the bread right away, put the yeast in a well on top of the dry ingredients in your bread machine pan. Otherwise stir it in with the dry ingredients.

When the beep sounds for adding ingredients add:

72 grams dried cherries

If you want to use the quick setting on your bread machine, use 9 grams rapid rise yeast instead of the active dry yeast.

Understanding Macrobiotics

A facile glance at the recent newspaper or television show would tell us that indeed, we live in the time of the Diet. Bodies are no longer just bodies, but public property meant to be scrutinized for excess fat and poor skin. Diets abound, and diet programs are all promising salvation for those who can "walk the walk" and "talk the talk".

In the United Kingdom alone, a very old and yet still wildly popular diet from the United States has caught the fancy of more than 3 million Britons. Fashion trends and eating patterns are not likely to change in the coming years, so we had better brace ourselves.

But the question that begs to be asked in our hectic, modern, diet-driven times is: do we still have a healthy and beneficial relationship with food? It seems that in our haste to lose weight and "look the look", we forgot all about nutrition and eating balanced, holistic diets.

Macrobiotics

Macrobiotics is just one approach to losing weight. There are literally thousands of diets out there just begging to be tried, but it seems that this one is the least commercialized and therefore one of the most believable. If something is too common-sense to be commercialized and marketed, then it must be examined whether it speaks the truth.

Essentially, macrobiotics is a simple avoidance of polar extremes. For example, if we can choose between red meat and lean or light meats, of course we go for the lean, light meats.

Avoidance is not really deprivation- because you always choose the lesser evil. Another example is between wheat bread and plain bread, which would you choose? If you are to examine their caloric content, then the choice would be quite easy: we drop the wheat-based bread and chomp on the flour-based one.

The approach sounds sensible and doable because it does not really require you to spend more money on food, nor does it emphasize any particular brand of food or weight loss plan.

Simply put, the macrobiotics approach emphasizes control and the importance of decision-making in what we eat. Eating lighter foods means we will end up being lighter. More fiber means we have a better excretory system and our bowel movements would be much more efficient.

On dieting

Since this approach is just one of many that you can choose from, then perhaps now would be a great time to remind ourselves that eating should primarily be a joyful activity- because there is pleasure involved.

Dough Now or Later

MAKE IT AND BAKE IT NOW OR MAKE IT, FREEZE IT AND BAKE LATER

Ingredients:

Wheat Bread

3 to 4 cups Bread flour,

3-cups Flour,

1-tablespoon Salt,

2-tablespoons Butter, softened,

4-tablespoons Sugar,

2-packets or 4½-teaspoons Active dry yeast,

2½-cups Warm water (needs to be 120°F).

Instructions:

Combine 3½ cups of the bread flour, sugar, salt, butter and yeast in a large bowl. Slowly add warm water; beat with mixer on low speed for about a minute, scraping the bowl often. Stir in ½-cup of bread flour and start adding the regular flour one cup at a time until dough is easy to handle.

Lightly flour some wax paper, place dough on floured wax paper and knead dough for about 10 minutes or until the dough is smooth. Divide dough in half and shape, place in bowl and let rise. Take dough out of bowl and knead a few minutes; place into a 9x5-inch loaf pan and let rise again. Preheat oven to 425°; bake for 25 to 30 minutes or until loaf is a golden brown. Remove from pan to let cool and brush with butter.

Instructions for dinner rolls: After letting dough rise once, divide dough into 30 pieces and place into pan or cup cake pan and let rise again. Bake at 375° for 25 to 30 minutes or until golden brown.

To freeze and make later just divide dough in half; wrap each half-in airtight gallon plastic freezer bags. Frozen dough will keep for 1 to 2 months. When ready to use remove from freezer and place sealed bag in refrigerator for 8 to 16 hours or place sealed bag on your countertop for 5 to 10 hours. Remember to keep checking during this period to see if dough has thawed. Once the dough has thawed, follow the instructions above on rising and baking.

Makes 2 loaves or approximately 30 dinner rolls

Note: If you want wheat bread then use Whole Wheat flour in place of the 3 cups of regular flour. You can also add 1/2 cup of finely chopped nuts or 1 cup of finely shredded cheddar cheese to change it up.

Whole Grain Vs. Whole Wheat - What's the Best for You? Part II

Here is an easy way of finding the healthiest breads and cereals that you can. Number one, look for the words WHOLE GRAIN. Look at the first two ingredients, if one those two do not say WHOLE GRAIN, put it back! Number 2, look for the FDA-approved health claim that reads "In a low fat diet, whole grain foods may reduce the risk of heart disease and some forms of cancer". That sounds easy enough doesn't it. Now you have no more excuses when you are at the store. You can find healthy breads and cereals for you and your family.

Well, we know how to find whole grain foods, but even at that, there is still discrepancy between how much whole grain should be in the food to make it the healthiest. Look once again at the nutritional statement on the box. There are two things you really want to look for. Fiber grams and Sugar grams. High fiber, low sugar is the best bet. So, what is high fiber, what is low sugar? The FDA will usually only put their mark of approval on foods that are good or excellent sources of fiber. A good source of fiber has 6-10 grams of fiber per serving. An excellent source of fiber has 16 or more grams of fiber per serving. Using this as your guide, you need only to eat 3 servings of an excellent source of fiber, or 6 of the good sources of fiber. As far as sugar goes you should eat foods with 2 grams or less of sugar per serving. The more sugar in the servings, the less fiber that will be in it. The more fiber, the less sugar. Lets look at a new trend General Mills is coming up with. Take the new whole grain, low sugar Cinnamon Toast Crunch. We need to look at both boxes to compare this. Here is the regular cereals stats. 130 Calories, 10 grams of sugar and 1 gram of fiber. How about the new cereal, 120 calories, 2 grams of sugar and 2 grams of fiber. General mills has done a pretty good job. If you have to eat cinnamon toast crunch, then this will be better than the original. But does it stack up to our new found knowledge? NO! There is hardly any fiber in this cereal to make it a good source of fiber. It would not be considered a good source, or an excellent source. They did manage to make it look better on paper however, or cardboard to be exact. How about one of those healthy cereals? Let's look at Kashi GoLean Crunch. It says seven whole grains, it has 190 calories per serving, 8 grams of fiber and 13 grams of sugar, it also contains 9 grams of protein. When looking at the nutritional facts on the box the first set of ingredients is, whole oats, whole long grain brown rice, whole rye, whole hard red winter wheat, whole triticale, whole buckwheat, whole barley, and sesame seeds. The second item is soy protein concentrate, and the third is evaporated cane juice, followed by brown rice syrup. So we are getting better on our choices here. Even with the high sugar content, which is all natural by the way, they do have whole grains, and multi-grains at that. I am not saying natural sugar is really much better for you , but at least it is not the refined white sugar that we see so often. These natural sugars will still affect your blood sugars, but will take a little longer than refined sugar. Put this cereal next to our new set of standards and how does it stack up? Well, we are doing good on fiber, the added protein is a good addition, sugar however is still above the recommended health benefit. Is it good for you? It is better than even the whole grain low sugar Cinnamon Toast Crunch, but you will need to decide if this is the best you can do.

So, with all this information what should we do? We should try to make the best choices available. If you are afraid that eating healthier will cause you to be slaving away in the kitchen you need to realize that there are so many products out there that are good for you and easy to fix. Take for example the Grinin Grains line. Home made batches of scone mix, pancake mix, waffle mixes, and cereal mixes. These are made in small batches using the whole grain and priding themselves on the healthiness of their product. Breads, cereals, pastas, and even baked goods are beginning to come around and make the change to provide a healthier food choice for your family. Shouldn't you try and do the same?

Recipes For Citrus Glazed Chicken and Sausage and Pear Stuffing

Here is a quick, healthy recipe for chicken breasts that is sure to become a family favorite. You'll love it because it is quick, easy, healthy, and economical. The citrus glaze gives the chicken breasts just a little extra twist. For a different side dish, try the sausage, pear stuffing. Made with whole-wheat bread and a pear, it is sure to become one of your favorite stuffing recipes. Add a salad and you have a quick, hearty meal for your family. Make this one of those sit-down family dinners that I always recommend.

CITRUS GLAZED CHICKEN

Wheat Bread

4 boneless, skinless chicken breasts (about 1 lb)
3 tbsp orange juice concentrate, thawed
2 tbsp lemon juice
1/2 cup chicken broth
3 tbsp Splenda or Equal Sugar-Lite
1 1/2 tsp cornstarch
1 tbsp butter
1 tbsp chives, chopped
1 tbsp fresh parsley, stemmed and chopped
1/4 cup sliced almonds, roasted

Preheat oven to 425 degrees. Place chicken breasts on foil-lined baking sheet. Brush with 1 tbsp orange juice concentrate. Bake 15-20 minutes until cook ed through.

Place remaining juice concentrate, lemon juice and broth in a small saucepan. Blend Splenda/Equal and cornstarch in a small bowl. Stir cornstarch mixture into juice mixture in saucepan. Heat over medium-high heat and simmer 8 to 10 minutes until sauce thickens slightly. Remove from heat and whisk butter into the sauce. Add chives and parsley. Pour over the chicken breasts then top with the almonds.

SAUSAGE AND PEAR STUFFING

2 tsp extra-virgin olive oil
4 cups whole-grain bread cubes
1 lb mild sausage
1/2 low-sodium chicken broth
4 celery stalks, chopped
1 medium onion, chopped
1 Bosc pear, coarsely chopped
1 tbsp chopped fresh sage
1 large egg, lightly beaten or 1/4 cup egg substitute
1/4 cup chopped fresh parsley
1/4 tsp salt
1/4 tsp freshly ground black pepper

Heat oven to 350 degrees. Spray a 9x13-inch baking dish with non-stick vegetable oil spray.

Place bread crumbs in a large mixing bowl. Cook sausage in a skillet over medium-high heat until browned. Drain well in a colander then add to bread crumbs in bowl. Put olive oil into a skillet, heat and add celery and onion. Cook until softened. Add pear and sage, cook 2 minutes longer. Put vegetable/pear mixture into bowl with bread and sausage. Add egg and stir to combine. Add broth, parsley, salt and pepper; mix well. Spread mixture into baking dish. Bake until top is crispy and stuffing is heated through, approximately 1/2 hour.

Dinner: Tomato Salad, Baked sweet potato, steamed cauliflower. 6,7,8

Dessert or Bedtime snack: Baked apple. 9

Add low fat protein in the way of chicken, lean pork or beef, and fresh fish or shell fish and you will have a well rounded day. It is good to have protein at most meals. Also, if you add protein with a snack, it will help you to feel satisfied.

Nuts and seeds are a good source of protein and fiber and help you to feel full, but be careful as they are high in calories. Low fat cheese is also good for both daily and protein.

What are whole grains? They supply the needed fiber to your diet. Check the labels on your breads and other products. If it does not say 100% whole wheat, it probably is not. Many types of bread say wheat bread, but have little if any whole wheat in them. Pasta now comes in many forms of whole grains. It used to be that whole wheat pasta did not taste all that good, but today it is very palatable, and it is an easy way to get the needed fiber into your diet. An easy way to get a lot of your fiber is in cereal. Some has as much as 15 grams of fiber. Check the labels and aim for at least 5 grams. Most of the high fiber cereals have less sugar, too.

The good fats are olive oil and other vegetable oils, especially canola, safflower and the nut oils. Stay away from ANY trans fats. What about butter or margarine? According to the latest research, a trans fat-free margarine is the best. It does not have the saturated fat that butter has. You can also use olive oil as a dipping sauce with your bread instead of a spread. It is important that you have fats in your diet, so use them. I keep a bottle of olive oil on my counter and use it for most everything. I even use it in baking! No one is the wiser.

Try eating this way for a while and you will see a difference in your skin and also in your waist line! Good nutrition benefits you all over. You will see it from head to toe and you will feel better.

Bread, Anyone?

I have always been a big fan of breads. Yes, that I can last a whole week just by eating bread alone. I always find myself amazed and mesmerized going inside a bakery or a café with breads displayed on the shelves. I don't know what is with breads that gives out such fulfilling feeling. Serve it with peanut butter and jam, or tossing ham with lettuce, tomatoes and cheese, or just plainly spreading butter, toasted or not, I will take it. May it be white, brown, wholemeal, whole grain, stuffed or plain.

Bread is considered to be the oldest prepared food, dating back a few centuries ago. Flour, water, sugar, yeast, salt, eggs and milk are the most common ingredients. Keeping your breads properly is essential to maintain its freshness. A stale bread is not appetizing to see nor to taste. To make it last longer, breads can be kept in a breadbox, or wrap it with a wax paper and put it inside the refrigerator. Another thing that you should avoid when storing breads is to keep it away from items with strong smell such as onion, detergent, soap, etc. as these may affect the bread's taste and aroma.

The health benefits of breads? It is a good source of iron, vitamins, calcium and protein. The high fiber content in the whole wheat varieties aids the digestion process. It is said to decrease the gastrointestinal tracts by keeping your digestive system on track. It can also be of great benefit to your heart, with studies showing that it can lower down cholesterol and can regulate pressure and glucose levels.

I do not have the # 1 on the list for my most favorite kind, with so many tasty bread recipes and variations available today. I always get baffled on what to take home, though I personally love the French, Italian and Japanese breads.

Sardinia, The Land Of Wonderful Bread

Sardinia is a very insular island, traditions and recipes have been handed down through generations. In Sardinia I look forward to nothing more than waking in the morning and taking a stroll down to the local bakery to collect my traditional Sardinian bread for my breakfast and lunch. Freshly baked traditional Sardinian bread is delicious with the minimal amount of fuss, very similar to Italian cuisine. A breakfast of freshly baked Sardinian bread, butter and Italian jam is unbeatable. Because of the way Sardinians have lived over the generation's bread making is a tradition that is still going strong today.

Traditional Sardinian dishes were, and in some remote areas still are - based on practical considerations. In the same way that meat was mainly roasted on the spit because the herdsmen were unable to carry heavy cooking equipment around with them, many types of bread were like-wise made with the needs of men in mind who often spent weeks on end in lonely mountain regions far away from the possibility of fresh supplies.

Wheat Bread

The bread had to be light in weight with low moisture content so that it would be less likely to go mouldy and, at the same time, be versatile enough to form the basis for a variety of quick, complete meals. Carta da musica or pane carasau, as it is called in Sardinia, fitted the bill perfectly: The once-baked flat bread could be rolled up and carried in a shepherd's bag and the twice-baked version was practically immune to mould.

Panefratau is the filled version of the carta da musica, whereby the crisp rounds of bread are turned into a nourishing meal with diced tomatoes, eggs, pecorino or other cheese, and herbs. Bread was also an important part of the menu of farmers and townsfolk except that they preferred heavier and doughier bread: moddizzosu- or mazzosu loaves could weigh up to 22 pounds (10 kilograms).

Whether it is bread for wandering herdsmen or for townspeople, nothing much has changed with regard to the Sardinians' preference for country-style breads made from bread flour, wheat, or barley flour. One look inside local bakeries will dispel any idea that southern Europeans only eat white bread, as is commonly supposed.

Another very popular bread is ciabatta, which is now also fairly common north of the Alps. Although ciabatta is not really a typical Sardinian bread, there is hardly a bakery - either in Sardinia or the rest of Italy - which does not sell this aromatic wheat bread with its lightly floured, somewhat leathery crust. Ciabatta is made from Grade 0 flour; in other words, not as fine or white as the bread made from Grade 00 flour, but it does have more bite and flavor. This soft and fairly moist bread has large holes in it which are formed during the six hours in which the dough is left to rise. They give the bread its characteristic appearance.

This distinctive Sicilian bread is actually called pane carasau. Its old Sardinian name is becoming increasingly uncommon as visitors from the mainland call it carta da musica. These thin almost transparent rounds of bread resemble sheets of parchment like music manuscript paper and the distinctive sound of these crisp sheets when they are broken also provides the musica.

Making pane carasau the traditional way is fairly expensive. First of all a dough is made from durum wheat semolina, wheat flour, yeast, water, and a little salt. This is left to rise for half a day. Then it is kneaded again and left to rise a second time. The dough is then divided into balls and rolled out into wafer-thin rounds. After being left to stand for several more hours, the bread finally goes into the oven. As soon as the rounds of bread balloon up, they are removed from the oven and cut horizontally through the middle. The halved bread circles are then baked a second time until they are a delicious golden brown colour. Because the preparation is so time-consuming, most Sardinians leave it to the baker to make this musical bread. He sells it in stacks of ten or twenty, wrapping his delicate product in paper to protect it. Carta da musica is a tasty snack just as it is, but it can also be brushed with oil and briefly reheated to make it even crispier. It can also be soaked in water to restore its original elasticity and then made into a type of lasagne by layering it with different fillings in an ovenproof dish.

The most popular dish of all must be pane fratau. For this, the bread rounds are spread with tomato paste, layered with poached or fried eggs and then sprinkled liberally with grated cheese. Pane carasau has even made a name for itself in the expensive restaurants of the famous tourist resorts. The bread is broken into pieces, brushed lightly with oil and sprinkled with coarse sea salt - this is as addictive as crackers or crisps. Once you start nibbling, as with pane carasau you can't stop, it's irresistible.

Coccoi pintatus or pintau is a beautiful bread made by mixing bread flour, lukewarm water, and yeast together. It is often decorated with a cross to ensure that it turns out well! It is then shaped by nimble fingers, using scissors, knives, and pastry cutters, into a vast number of figures ranging from plants to animals. You can see fish, birds, little pigs, turtles, roses, and many other things if you keep a look out. These small works of art are usually mainly made for festival days.

Civraxiu is a specialty bread from Cagliari is baked with bread flour. In order to get a smooth, homogenous dough, it must be well kneaded. As soon as it has risen, it is shaped into loaves, each weighing about two pounds (1 kilogram) and baked in a wood oven. Since the method of making it varies from place to place, civraxiu comes in strong and soft, thin, and thick versions.

Traditional Sardinian bread is the perfect accompaniment to any traditional Sardinian dish. The pane carasau is the perfect bread to place on the table as a starter course, wonderful with olive oil and salami and the civraxiu is perfect with a main meal of tomato sauce and sausage.

Olive Oil In Diet Better Than Whole Grain Bread

For those who want to live a healthy lifestyle, new research has shown that the daily use of Olive Oil in your meal is especially beneficial. In fact the use of Olive Oil seems to be even more beneficial then eating an extra slice of whole wheat bread. This is the outcome of research by members of the John Hopkins University on a comparison between three "health diets".

An Olive Oil rich diet lowers the blood pressure and the Cholesterol level much more then a carbohydrate rich diet. Compared to a protein rich food an olive oil rich diet is easier to digest.

Scientists from the John Hopkins University have researched the DASH-diet. (Dietary Approach to Stop Hypertension). This diet has been developed a few years ago to aid people with high blood pressure problems. The researchers have compared DASH to two alternative diets and have published their conclusion in the Journal of the American Medical Association

The DASH diet contains a lot of carbohydrates. You eat muesli for breakfast, whole grain bread for lunch and pasta for dinner. This is combined with fish, chicken and nuts and olive oil

The other two diets tested are a protein rich and a carbohydrate rich variation of the DASH diet, but with no olive oil.

All three diets did lower blood pressure and cholesterol significantly but the diet that contained the olive oil stood out as the most effective. It lowered blood pressure and cholesterol just a bit more. And these factors are an important determinant of the long-term onset of cardiovascular disease.

All participants in the research reported that it was fairly easy to comply with each of these diets. But the participants in the protein rich variety complained more often about digestive problems and as a result of that they tended to be less physically active then the control group.

So this is an outcome that supports the Mediterranean Diets with their high Fish (Omega 3 fatty acids) and Olive Oil content even more.

Whole Grain or Whole Wheat Foods Benefit Heart Health

Some new research finds that anyone who regularly eats whole grain or whole wheat foods instead of the refined kind puts on less of the type of fat that's tied to a higher risk for heart disease and type 2 diabetes. The fat, known as visceral adipose tissue (VAT), surrounds the intra-abdominal organs and is associated with the onset of high cholesterol, insulin resistance and high blood pressure - a group of risk factors known to medicine as metabolic syndrome.

Metabolic syndrome has become increasingly common in the U.S. and estimates suggest that 50 million (or more) Americans now have it.

Wheat Bread

This latest research into whole grains and heart health comes from an analysis of dietary surveys and body-fat scans conducted on over 2,800 adult subjects between the ages of 32 and 83 years old. The participants underwent multidetector-computed tomography (MDCT) scans to see how much VAT and subcutaneous adipose tissue (SAT) they had.

The researchers compared the types of fat tissue (both VAT and SAT) to the intake of whole and refined grains, and saw the most striking relationship between intake of whole grains and visceral fat.

Even after they accounted for other lifestyle factors like smoking history, alcohol intake, fruit and veggie intake, percent of daily calories from fat and physical activity, the team found that eating a few servings of whole grains a day was associated with smaller amounts of troublesome VAT.

It seems that the volume of VAT was almost 10% lower in adults who ate three or more servings of whole grains a day and also limited their intake of refined grains to under one serving each day.

In case you're wondering, a serving of whole grains could be a slice of 100% whole wheat bread or a half-cup of oatmeal. A serving of refined grains was considered a slice of white bread or a half-cup of white rice.

Interesting that those subjects who ate three servings of whole grains and several servings of refined grains a day didn't benefit from the whole grain-VAT connection. If the refined grain intake was over four servings a day, whole grains didn't help the volume of fat.

Substituting whole grains for those refined ones seems to be the key.

Beyond possible protection against accumulating a troublesome type of fat, whole grains have vitamins, minerals and high amounts of antioxidants (in amounts near, or over, fruits and veggies) and other natural plant-based substances your body needs. They're a natural source of fiber and are low in fat, and are available in a choice of whole grain breads, varieties of rice, cereal, flour and pasta.

This study builds on earlier research that has linked a higher whole grain intake with a lower risk of metabolic syndrome and insulin resistance. Future work needs to look at whole grain intake and body fat distribution in a larger, far more diverse population. This may help experts find the mechanism that seems to be behind this relationship.

Estimates suggest that nearly 24 million children and adults have diabetes, and 5.7 million people with symptoms remain undiagnosed. Heart disease affects an estimated 17.6 million Americans and is the single leading cause of death in this country. If you're concerned for yourself or someone you love, making simple substitution to whole grain or whole wheat in your diet may well be your best chance for protection.

Whole Grains - The Secret To Weight Loss

Whole grains are an important addition to any-one's diet. They are by far the best source for carbohydrates the body can use, for many reasons. Let's first compare two simple items. We'll take a slice of white bread and a slice of whole wheat bread. White bread, has little to no fiber in it. The whole wheat slice has a good amount of fiber in it. Fiber is tough on the digestive system, but in a good way. It takes longer for the body to process foods that are higher in fiber. As a result, foods high in fiber keep you feeling full, longer. The white bread consists of simple starches surrounded by very little fibers. In effect, the body quickly digests the bread and converts it to sugar far more rapidly than the slice of whole wheat bread. This usually causes an insulin spike, which naturally makes the body feel hungry again. Alternatively, whole wheat bread is converted to sugar, but at a much slower rate which regulates the body's insulin level and reduces hunger.
In recent months, there's been a race amongst big corporate food processors to slap the "Whole Grain" label on just about anything that will legally qualify as whole grain. The problem is that typically when you purchase any foods from these big companies, whether or not it contains whole grains, they are accompanied by preservatives and ingredients with more than ten letters that some full grown adults can not even pronounce. Furthermore, there is label trickery that goes on and one must read them carefully. One example being, if you every buy wheat bread, ensure that it says whole wheat. The words whole wheat ensure that a whole grain was used to make the bread.
It is simple to add more whole grains to your diet. Personally, I prefer whole grain items over their simple carbohydrate counterparts. Allow me to give you a short list of alternatives.
Wheat Bread instead of White Bread
Brown Rice instead of White Rice
Whole Wheat Pasta instead of Semolina Pasta
Raisin Bran instead of Rice Krispies
Wheat Bagel vs Salt Bagel
Rye Krisp Crackers vs. Saltines

Beyond White Bread in the World of Publishing

Recently, my brother, RH Sheldon, posted an article called 'Writers-Cheap, Easy, Expendable'. In it, he discussed where writers landed in the publishing heap. Yep, on the bottom. The statement that struck me as the saddest and most telling was, 'without writers, many in the industry would end up baristas at Starbucks'.

I have long been a proponent of print on demand, and it truly allows us all a shot at finding readers. Remember, the primary relationship is between readers and writers, not publishers, agents, or distributors. If writing is the goal and selling what you've written the bonus, than self-publishing is the solution. If you haven't been able to get beyond a query letter, maybe you should look into it. You won't need a large financial investment, but you will need to spend a great deal of time trying to reach your readers. This, of course, is separate from the time you spend writing. If what you have to offer is readable, you have a shot.

Wheat Bread

Most people, across the board, are willing to admit that the industry is in bad shape. I am not saying that the people published by the large publishers don't deserve it. They are just not the only ones worth reading. Do the big guys really believe that people only want to read the books that they select? More importantly, do you believe that? Is it possible that people simply don't know what wonderful authors are out there waiting for readers?

I went to the library the other day and saw four shelves of books by the same author. A friend of mine who has spent a great deal of time in libraries over the years, both working and hanging out, said it is what readers want that fill the shelves. They are removing many classics to make room for 'popular' books. Now that is scary.

It's not unlike any other product marketing. You go to the grocery store and on the bread shelf, you see one companies' products. They sell white and wheat bread. You choose what you want from the choices available and go home. You chose wheat bread, and after a while you and your family are not only used to it, but like it. The next time you go to the store, you go right to the wheat bread and fill your cart. You don't even notice the little upstart company that has a tiny part of one shelf selling sour dough and rye bread. Soon, the store sees the little upstart company isn't selling anything. Rather than give them more space, they discontinue their products. They never had a chance, but the little upstart company regrouped. They began to sell only online. Slowly they developed their line of breads and became popular. Guess who tells them they'll give them a whole shelf to themselves, only if they receive seventy-five percent of the profit.

Okay, back to the library. What if it is what readers want. Is it what they really want, or is it because they don't know there's sour dough and rye bread available? You can't blame the librarians. Every book publisher in existence pitches them, and it would be physically impossible to read the number of catalogs, brochures, and books that pile up on their desks. They have to trust someone, and go by what their readers want.

Not many self-published authors have the money to run full color ads in papers and magazines, and often times it is even too expensive to find a cooperative catalog they can afford. Let's assume that the self-published author is in the same league as the author who has four shelves, or maybe even better. What do they do?

Today, I can see only one level playing field-the Internet. Though it is often like shouting in the wind, at least there's a chance someone will hear you. You certainly have nothing to lose by trying. I don't see publishing as a whole improving anytime soon. There's far too much money involved, but people who have a passion for something don't give up. It isn't a question of 'will I', for most of us the question is 'when'. As long as there have been powerful people running things, there have been groups of people considered less powerful, battering down the gates. I say we grab a couple of poles and start.

Crohn's Disease Diet - Is Eating Wheat an Issue for Crohn's Disease?

If you include wheat as part of your Crohn's disease diet it can be an issue, this is especially true when you have an allergy to gluten or wheat. Many people around the world do have trouble with digesting wheat and other grains that have high levels of gluten.

A reason people can have issues with gluten and other high gluten grains is that they are not part of our ideal diet your body is designed to digest. There are many people without Crohn's that can eat gluten or wheat with no obvious issues, but it can rob them of their true energy and vitality as their body works to make sure all the gluten/grains are removed before any damage is caused to the body.

Wheat Bread

Having a diet that is high in glutinous grains can be an issue when you have Crohn's, especially if you have a bad allergy to gluten. When you have Crohn's Disease there can be a problem with digesting gluten containing grains. Having a blood test to see if you have a gluten allergy can tell you if wheat is an issue for you.  

I used to eat wheat and other high gluten products for a long time as part of my Crohn's Disease diet before I knew they were a problem for me and that I had an allergy to them, using Prednisone for many years didn't help either. Prednisone can be a large factor when food allergies are concerned especially when taken over a long period of time.

Foods that you eat a lot of or consume them often can be a candidate for food allergies when long term Prednisone is involved. I did find out eventually it would be good for me to remove wheat and gluten from my diet as it was a factor that was stopping me regaining my health. I was reacting to wheat and some other grains which were making my Crohn's Disease symptoms worse.

Is Wheat and High Gluten Grains Part of the Natural Human Diet?

Modern humans or Homo sapiens have been roaming about for around 100,000 years and our digestive systems are the same today as they were back then. Grains were not part of our ancestor's diet because grains require processing so they can be eaten and our early ancestors didn't have the technology to do that.

The new types of grains are not good for digestion because they have been cross breed to make the gluten levels higher, so bread makers can make bread that is more soft and fluffy than bread that was made with the older breeds of grain.

Old varieties of grain with lower gluten levels are far easier to digest than the new cross breed grains that have much higher gluten levels. This is one possible reason for more cases of gluten and grain intolerance in recent times, as the grains that are being used today contain so much more gluten than in the past.

If you have Crohn's Disease eliminating grains from your diet can be beneficial, but there is still choice if you want to have grains in your diet even if you are sensitive to gluten. If you have a very bad allergy to gluten then these grains may be no good for you, seek the appropriate health professional who helps you with diet before adding them to avoid adverse reactions.

Some options may include in your Crohn's Disease diet are grains like rice, millet, quinoa, oats, and barley to name a few. These grains still can have some gluten in them so be smart and check with your health professional or doctor to see if they will be good for you. Having a blood test to see if you are sensitive to gluten, wheat and other grains is a good way to eliminate which ones will be an issue for you.
