Menu Recommendations - Healthy Menus For Picky Children

2. Gooey Mashed Potatoes.

How 'bout a twist on the old favorite? Add lean ground beef, cheese and reduced fat sour cream into your mashed potatoes. Your kids will definitely love you for it.

3. Spaghetti and Meatballs

Another old favorite. You can use lean ground beef and whole wheat flour for the meatballs or even turkey ground meat. Again, bake, rather than fry.

4. Vegetarian Burger

Afraid your kid is not getting his daily dose of veggies? Feed him a veggie burger. All you have to do is make patties out of 2 cups mashed black beans, 1 cup bread crumbs, 3 tbsp salsa, 1 egg and 1 cup cooked rice. Cook until brown and crisp, place in a bun and add lettuce, tomatoes, etc. He'll never know the difference!

Is Luncheon Meat Ever Healthy?

No nutritionist recommends luncheon meats as a healthy food, and, although I am not a nutritionist, neither do I. The nutritionists' recommendation to give up luncheon meat in favor of other heart-healthy, low-sodium, or low-fat foods, however, may not be appropriate for everyone.

As shocking as it may seem, a large proportion of Americans get the majority of their antioxidants from the preservatives in bologna, pressed ham, pastrami, mustard, mayonnaise, salad dressing (in the United States, usually Miracle Whip), and the white bread on which these meats and condiments are placed. If you eliminate BHA, BHT, and other preservatives from your "bad" diet, your health may actually suffer unless you start eating foods containing antioxidants.

Smokers, in particular, tend not to like fruits and vegetables. So, if you are giving up luncheon meats for your health and you cannot be persuaded to eat your greens, eat almonds, sunflower seeds, wild berry jellies (the real thing, preferably blueberries, lingonberries, or strawberries, not some imitation), pecans, walnuts, dried fruit (raisins, apricots, or dates are best), chile peppers, wasabi, horseradish, or fresh salsa or pico de gallo, on tortilla chips, if you must.

Or if you are not giving up luncheon meat, try eating some of the same foods. If you live on luncheon meat-and tens of millions of Americans do-don't give it up without replacing it with other healthy foods, even if they are not green vegetables.

There is a small statistical correlation between consumption of luncheon meats and various kinds of cancer, but luncheon meats by themselves, eaten in servings of up to 3-1/2 oz (100 g) four or five times a week, are, despite what you may have heard, not especially hazardous to your health, particularly if you do not smoke.

A bigger health problem with luncheon meat is food poisoning from spoilage. Bacterial contamination is more common in pastrami than in ham, and more common in ham than in bologna. This is because bologna is a fermented food. The bacteria that ferment bologna kill most pathogens. It is extremely rare for vacuum- packed sliced meats to host any bacterial growth until about 21 days before their "use by" date. Unsliced meats are typically bacteria-free until about ten days before their "use by" date. Once you open the package, eat the meat within a day or two or throw it out. Buy small quantities.

What is the most healthful way to eat luncheon meat? Start with the bread. Soft white bread is satisfying if you are going to eat your sandwich right away, but white bread in a sandwich stored in your lunch box tends to get mushy. Try a making sandwiches with bread that is almost too hard to eat straight from the package, such as a hard roll or a hard whole wheat, or maybe a multi-grain bread with seeds. The bread will soften as it sits in your lunchbox, you will enjoy your sandwich more, and you get extra antioxidants, vitamins, and fibers.

White bread quickly becomes sugar when it is digested, but white bread and a pickle does not. Just adding a pickle, the sourer the better, to your sandwich or to your lunch slows down the rate your body absorbs the sugars from white bread. As a result, your body makes less insulin, and stores less fat. Oddly enough, this effect is even greater when the meat or sandwich is high-fat rather than fat-free-but eat one slice rather than two or three.

Condiments also make a difference. It is always best to apply condiments to your sandwich just before it is eaten so the bread does not become soggy, but most kinds of bread except soft white hold up reasonably well for several hours. Ketchup, as you can read, is calming, and is also a good source of beta-carotene, lycopene, and lutein. Horseradish is a terrific source of a specific class of cancer-fighting chemicals called isothiocyanates; wasabi mayonnaise is a tangy dressing that supplies isothiocyanates that are especially healthful for smokers.

Tahini goes well with pita bread, and supplies sesamin, a chemical that turns "bad" cholesterol into a harmless form and lowers blood pressure. If you regularly eat greasy foods and sweets, sesamin shifts a fat-and-sugar biochemical pathway that turns inflammatory hormones into pain-relief hormones.

Quick Healthy Breakfast Ideas

Breakfast is the most important meal of the day.  Unfortunately, many of us neglect breakfast.  And there’s a lot of evidence to suggest that your body and mind will suffer unless you have a healthy breakfast each morning.  
You spend six to eight hours sleeping.  After that time, your body needs fuel to keep going.  Without breakfast at home, your options for on the run nutrition may amount to too much fat, too much sugar and too many carbs.  And, that convenient run to the fast food joint is not as convenient and time saving as you think if everyone else has the same idea.  The fifteen or twenty minutes spent in line could have been used to fill your belly with something good at home.  
If you are the type to skip breakfast, here is a solution to starting the day with a good breakfast which will help you keep hunger in check as well as give you the natural energy boost to start your day.

1. Oatmeal
– This food makes a good hot meal that contains lots of filling fiber to keep you from getting hungry later on in the morning.  Depending on your taste, you can take five minutes to fix it on the stove or use the microwave for instant oatmeal.  Kids tend to like the variety of flavors that come with instant oatmeal.  The night before, put together a container of add-ins like blueberries, strawberries and bananas that can be tossed on top for a bit of antioxidant power.
2. Fruit smoothies – These are good any morning but particularly on a hot day.  You’ll have to blend the ingredients together in the morning, but the prep work can be done at night.  Cube your fruit and place it into a container.  Instead of frozen yogurt in the morning, use a cup of plain yogurt.  Add ice cubes, a little water and blend.
3. Egg sandwich – The eggs can be cooked the night before and placed in a sealed container.  In the morning, warm up the eggs in the microwave.  If you want, add some chopped veggies or shredded cheese.  Serve on toasted wheat bread.  The night before, place two pieces of bread into a Ziploc bag for each family member.  They can toast their bread as they get up and place the sandwich in the bag for easy transport in the car to work or school.
4. Yogurt with granola and fruit – Some people like to eat yogurt.  But, yogurt by itself won’t keep you from being hungry.  Add some granola and a few blueberries to the mix.  This makes a great breakfast idea for those mornings when you are running late.  Keep small bags of granola and blueberries in the fridge next to the yogurt so you can grab them and run.

Remember, if your child has not been exposed to sugar, she won't miss it.
Feed whole grains
Stay away from white flour. Most American diets are painfully low in whole grains, because we are a "white bread" society. Try using wheat breads, oats and other whole grains instead.
Keep the beverages simple
Milk, water and juice are enough. Soda and sweetened drinks will work their way in eventually, but put it off as long as you can. In addition, watering the juice down a bit can help reduce the calories and sugar content. Plus, it minimizes the risk of your child having a stomach ache from too much juice.
If at first you don't succeed, try again
Keep reintroducing healthy foods, even if they are not met with applause the first time around. The rule in our house is that you have to try any food you don't like every six months. Children's tastes change, and what they didn't like a few months ago might just taste better, so keep trying.
Evaluate the family eating habits
As your child grows, she will be spending more time eating what the rest of the family eats, so it's important that your eating habits be good, too. Are you serving a wide variety of foods? Think color - too much white food has a lot of calories, and not a lot of nutrition. Green, yellow, red and orange foods should be on your table on a regular basis.
Establishing good eating habits for your child is one of the best gifts you can give her. It will set her off on a lifetime of health and well being. Remember, the best way to get your children to eat well is to be a role model. They will eat the way you eat, so set a good example.

Bread has always been one of my biggest challenges when it comes to dieting. I love bread! and if I didn't have some type of bread with every meal, it didn't feel complete! Well, tiny did I know that bread was one of the main things that was holding that unwanted weight on me. I was always taught that if you eat wheat bread verses white, it was a more healthier choice. The last item I will write about is bread, one of the most important items. The healthy breads to look for are logically the ones that contain whole grains, oat, flax, spelt bread, rye bread. These breads contain the "good" carbohydrates that constitute a healthy food choice.



White flour breads have no nutritional value for our bodies. Please try to introduce these good choice breads to your children at any early age, so they will become accustomed to eating healthy bread for healthy living.

Healthy Eating Affects Your Skin and Your Waist

How you eat affects your appearance. Your skin especially shows the results of eating right. Getting in the habit of healthy eating, along with a good skin care regime, can help take years off you appearance and it is not that hard. Good eating has an anti-aging affect on your skin too. It also has the benefit of helping to keep you at a healthy weight.

Processed foods can play havoc on you. They contain large amounts of trans fats, sugar, preservatives and who knows what else. It seems it is so much easier to grab a box of whatever than to start from scratch, but at what cost?

What foods make up a good diet? Fruits, vegetables, low fat protein, low fat dairy products, whole grains and good fats.

Fresh fruits and vegetables are very accessible today. These are easy to prepare and add the antioxidants that your body needs. Most grocery stores have fresh vegetables prepared for you in cut up portions ready to eat or cook. You can also get fresh frozen fruits and vegetables with no sugar or salt added. Aim for 7-9 servings a day. Not only is it good for you, but it will help fill you up and lose weight at the same time. Fruit juice counts as a serving, but it does not have the fiber or make you feel full like the fruit does. What are 9 servings? It sounds like a lot, but it really is not. An example of a day could be:

Breakfast: a piece of fruit with your cereal. 1

Mid-morning Snack: fruit and nuts. 2

Lunch: salad with lettuce, fresh broccoli, celery, carrots, onions, and mushrooms. 3 & 4

This could even be three servings, depending on how much vegetable you add.Mid Afternoon snack: Either fruit or raw carrots and celery. 5

Dinner: Tomato Salad, Baked sweet potato, steamed cauliflower. 6,7,8

Dessert or Bedtime snack: Baked apple. 9

Add low fat protein in the way of chicken, lean pork or beef, and fresh fish or shell fish and you will have a well rounded day. It is good to have protein at most meals. Also, if you add protein with a snack, it will help you to feel satisfied.

Nuts and seeds are a good source of protein and fiber and help you to feel full, but be careful as they are high in calories. Low fat cheese is also good for both daily and protein.

What are whole grains? They supply the needed fiber to your diet. Check the labels on your breads and other products. If it does not say 100% whole wheat, it probably is not. Many types of bread say wheat bread, but have little if any whole wheat in them. Pasta now comes in many forms of whole grains. It used to be that whole wheat pasta did not taste all that good, but today it is very palatable, and it is an easy way to get the needed fiber into your diet. An easy way to get a lot of your fiber is in cereal. Some has as much as 15 grams of fiber. Check the labels and aim for at least 5 grams. Most of the high fiber cereals have less sugar, too.

The good fats are olive oil and other vegetable oils, especially canola, safflower and the nut oils. Stay away from ANY trans fats. What about butter or margarine? According to the latest research, a trans fat-free margarine is the best. It does not have the saturated fat that butter has. You can also use olive oil as a dipping sauce with your bread instead of a spread. It is important that you have fats in your diet, so use them. I keep a bottle of olive oil on my counter and use it for most everything. I even use it in baking! No one is the wiser.

Try eating this way for a while and you will see a difference in your skin and also in your waist line! Good nutrition benefits you all over. You will see it from head to toe and you will feel better.

Is Whole Wheat Bread Really Healthy For You?

Bread has always been one of my biggest challenges when it comes to dieting. I love bread! and if I didn't have some type of bread with every meal, it didn't feel complete! Well, little did I know that bread was one of the main things that was keeping that unwanted weight on me. I was always taught that if you eat wheat bread verses white, it was a more healthier choice. I'm sure some of you were taught the same. Well, guess what guys, we were taught wrong again! Treating heart problem or preventing heart disease is not only possible, but also within your reach. Here are some natural remedies you will find in your very own kitchen.
High Fibre Food: High-fiber food like barley, oats, whole grains such as brown rice and lentils, and beans, such as kidney beans and black beans, will help keep your cholesterol levels in check.
Olive oil: According to the American Heart Association and the American Dietetic Association, it is helpful to get most of your fat from monounsaturated and polyunsaturated sources. Use polyunsaturated oil (sunflower, safflower, corn and soybean oils) or monounsaturated fats (such as olive, canola and peanut oils) in place of other vegetable oils when cooking your veggies.
Whole-wheat bread and peanut butter: Some peanut butter on a slice of whole-wheat bread is a good snack that's good to your heart. One slice of whole-wheat bread has 11 mcg of selenium, an antioxidant mineral that works with vitamin E to protect your heart. Peanut butter is one best source of providing you with your daily intake of 1/3 of vitamin E.
Wine. Research studies have shown that drinking a glass of alcohol a day may help in the battle against heart disease. Moderate intake of alcohol is helpful-moderate as one glass a day for women and two glasses of alcohol a day for men. What's in one drink? Twelve ounces of beer, five ounces of wine, or 1.5 ounces of whiskey.
Broccoli. Calcium is another heart-healthy nutrient. Milk isn't the only calcium-rich food. In fact, there are lots of non-dairy foods that are rich in calcium, such as salmon, kale, broccoli, figs, pinto beans, and okra. One cup of broccoli can supply you with 90 mg of calcium.
Chicken. Three ounces of chicken will give you 1/3 of your daily requirement for vitamin B6, a necessary nutrient for maintaining heart health.
Fish. Adding fatty fish to your diet is also a good idea. A good source of omega-3 fatty acids, three ounces of salmon meets your daily requirement for vitamin B12, a vitamin that helps keep your heart healthy. Fish intake lowers triglycerides and reduce blood clots that could potentially block arteries in the heart.
Fruits: Strawberries, Oranges, Amlas are Vitamin C rich fruits that act as an antioxidant vital to maintaining a happy heart. Daily use of lemon also prevents heart problems as it prevents the accumulation of cholesterol in the blood vessels. Being a natural source of vitamin C, Amla (Emblica myrobalan ) prevents all heart problems. Fresh grape fruits are highly beneficial in the treatment of heart disease as they tone up the heart. Apples have heart-stimulating properties. Apple juice and apple jam can be taken in liberal amounts. Watermelon is another fruit which can reduce high blood pressure.
Sweet potatoes. Sweet potatoes are a smart choice for fending off heart disease.
Garlic. Garlic lessens plaque buildup, reduce the incidence of chest pain, and keep the heart generally healthy. It is also a mild anticoagulant, helping to thin the blood.
Honey. This is considered as one of the excellent home remedies for heart care. Mix a tablespoon of honey and the juice of half a lemon in a glass of water, before going to bed.
Beet juice. It is considered as the most effective for heart ailments.
Tulsi. Take a spoon of tulsi juice with a spoon of honey on empty stomach every day as this is very effective home remedy for heart care.

Heart Healthy Foods

When thinking about heart disease, we know that a change in diet is often needed. In today's world of fast and convenient foods, people think more of saving time than saving calories and fat. If we can be just a little bit more conscious about what we are eating, then we can greatly reduce our risk of heart disease in the future.
One of the best ways we can change up our diet is by restricting our use of solid fats like butter, bacon, and gravies. These are known as Saturated and Trans fats. We often use these fats to help prepare the food we cook. Some great low-fat alternatives are olive oil, yogurt, and fresh fruit. Try to also be label-conscious and read the contents. Look for ingredients like polyunsaturated fats – found in nuts and seeds – and monounsaturated fats – found in canola and olive oil. Be wary of the boxes labeled "reduced fat" though as they often still contain the bad fats.
Something else we can do is to choose meats that are lower in fat. Fish is always a healthy choice and most even contain the heart-healthy omega-3 fatty acids our bodies need. These omega-3 fatty acids can actually reduce our levels of triglycerides. Lean cuts of pork, beef, chicken breast and turkey are also great choices. Beans and other legumes are a wonderful meat alternative, while still providing our bodies with needed protein. Soy and tofu have become popular in recent years also adding to the meat alternatives list.
The largest dietary change we can make is adding more fruits and vegetables. Many Americans do not even eat half of the servings the food guide recommends as it is not convenient. Fruits and vegetables are chock full of vitamins and minerals, the things we need each and every day.
Soluble fiber is often found in fruits and vegetables and is an excellent source for reducing our cholesterol levels. Fruits and vegetables have also been proven to help reduce heart disease. By snacking on these tasty treats, we are less likely to snack on something higher in fat.
It is easy to keep fruits and vegetables in the fridge ready for snacking as most just need a quick rinse in water and we can munch away. Sometimes even keeping vegetables such as carrots, broccoli, and cauliflower already cut up in the fridge or a bowl of fruit on the counter makes it easier for us to grab and go if we are in a rush.
Whole grains, as found in bread and pasta, are another great dietary change we can make to help our heart. Choosing 100% whole wheat breads and pastas gives us the nutrients we need that we cannot get from other foods.  We also need to be aware of our salt intake. Salt is a huge heart enemy resulting in higher cholesterol levels.  Processed foods often have added salt, so by choosing fresher foods, we are cutting our salt intake.
By adding more of these foods to our diets on a daily basis, not only are we reducing our risk of heart disease, but an added side effect is weight loss!
