How Diabetics Can Enjoy Sandwiches - Mozzarella-Bologna and Fool Me Tofu Egg Salad Sandwiches Recipe

Diabetics, too, need or simple want to grab a sandwich from time to time. It is possible to eat healthy sandwiches by using whole-grain breads with the meat and cheese that offer protein. These Mozzarella/Bologna Sandwiches use whole-wheat English muffins as bread and feature bologna, cheese, and lettuce. The Tofu "Egg" Salad Sandwiches are a great alternative for those who love egg salad but are trying to eat less eggs.

MOZZARELLA/BOLOGNA GRILLED SANDWICHES

4 whole-wheat English muffins

2 tsp butter or margarine

2 tbsp low-fat mayonnaise

4 tsp pickle relish, drained

1/2 lb sliced bologna

1/2 lb Mozzarella cheese, sliced

4 lettuce leaves, washed and dried well

Split English muffins. In a 10-inch skillet over medium heat, melt butter or margarine. Put English muffin lower halves in skillet, split side down. Cook until golden. Remove to plate and repeat process with the upper halves. Mix mayonnaise and pickle relish together in a small bowl. On lower halves of muffins, arrange bologna and cheese slices on the cut sides. Cut to fit. Spread mayonnaise mixture over cheese and bologna. Top with the top halves of the muffins. Return sandwiches to skillet and brown over medium heat. Serve on a lettuce leaf.

FOOLED ME TOFU EGG SALAD SANDWICHES

1/4 cup chopped celery

2 green onions, chopped

1/4 cup mayonnaise

1 tbsp sweet pickle relish

1 tbsp dill pickle relish

1 tbsp Dijon mustard

1/4 tsp ground turmeric

1/4 tsp salt, optional

dash of fresh ground black pepper

1/8 tsp cayenne pepper

1 pkg (12.3-oz) silken firm tofu, cubed

8 slices whole-wheat bread

4 lettuce leaves

In a small bowl, combine the celery, green onions, mayonnaise, pickle relishes, Dijon mustard, turmeric, salt (if using), and black and cayenne peppers. Gently stir in the tofu. Spread mixture over four slices of bread. Top each with a lettuce leaf and add the remaining bread slices.

Sandwiches are among the favourite snacks and of many people. This food comprises of usually two pieces of bread which have been piled together with a spread in the middle. Other times, they can comprise of foods such as ham, chicken or even tuna. Here are some more tips on how you can make your snack healthier.

Choosing the right bread is the first thing you have to consider. There are a lot of choices in the grocery store. Wheat bread with high fiber is normally the best to choose if you want to eat healthy. But there is also a technique on how you can make your snack contain a lower calorie. One tip is to slice the bread in half in the usual way. This will slightly cover the meat and cheese inside. Another option is to slice the bread in half by its width which will make the bread's slice thicker. This helps lose the weight because it makes you eat one sandwich instead of two.

The next thing to be considered is the filling, in this case, the vegetables need to be heavy. Staple vegetables that are normally found in sandwiches are tomatoes, lettuce, green peppers, spinach, cucumbers, and onions. But if you prefer to add in more vegetables, then that's no problem. After that, there should be a flavouring that will add to the taste of the sandwich. Examples of these are mustard and mayonnaise. If you're watching out for your weight, choose a fat free mayonnaise.

Lastly, the meat can be added. The goal in doing this is to be healthier, so it is important to remember that less is more. Advisable meats are salami, chicken, tuna, pepperoni, or ham. To add flavour to your sandwich, you can also add in potato chips on the side. But it is important to watch the amount you put in. If you're a big fan of potato chips, you can opt for baked chips that contain less calories and fats. They taste just like the regular ones but with lesser grease.

Soda should be avoided and opt for water or a fruit juice instead. By eating this every day, you can control what you eat and in return, be rewarded with a longer and healthier life.

Healthy Peanut Butter and Jelly Sandwiches

Growing up we all ate Peanut Butter and Jelly Sandwiches, and we all loved them. The only problem with the sandwiches we ate was that they were made with:

1. White Bread - Eating white flour is similar to eating white sugar

Wheat Bread

2. Peanut Butter - High in sugar

3. Jelly - High in sugar

Below, I have a Peanut Butter and Jelly Sandwich recipe that is healthier than the one Mom used to make and still tasty. It's also relatively inexpensive.

Recipe:

Ingredients:

---2 slices of Nature's Own 100% Whole Wheat Bread, or your favorite stone-ground whole wheat bread.

---1 tablespoon of Smucker's Reduced Fat Creamy Peanut Butter, or your favorite natural peanut butter.

---1 tablespoon of Smucker's Low Sugar Grape Jelly, or your favorite low sugar jelly.

Instructions:

1. Spread peanut butter on one slice of bread

2. Spread jelly on other slice of bread

3. Combine the two slices

Facts:

---Cost per serving: 43 cents

---Calories per serving: 225 calories

---Protein per serving: 12.5 grams

---Carbohydrate grams: 32 grams

---Fat grams: 8 grams

---Sugar grams: 8 grams

---"Bad" Fat grams: 1 gram

I love this recipe and eat Peanut Butter and Jelly Sandwiches often. These sandwiches taste great and are very easy to prepare. These sandwiches are also cheap and healthy because they are made with:

Healthy Grilled Cheese Sandwiches

Make a healthier Grilled Cheese Sandwich than the one we ate when we were growing up.

Recipe:

Wheat Bread

Ingredients:

2 slices of Nature's Own 100% Whole Wheat Bread
2 slices of 2% fat American cheese
2 seconds of olive oil cooking spray

Instructions:

1. Preheat skillet or pan with medium heat
2. Spray pan with 1 second of cooking spray
3. Place both slices of cheese between bread slices
4. Place cheese sandwich in preheated skillet
5. When bread is golden, spray one second cooking spray in pan and flip sandwich
6. Remove from skillet when the other side is golden

Facts:

-Cost per serving: 80 cents
-Calories per serving: 218 calories
-Protein per serving: 16.0 grams
-Carbohydrate grams: 24 grams
-Fat grams: 9 grams
-Sugar grams: 6 grams
-"Bad" Fat grams: 3 grams

Bacon Sandwiches Suitable For Diabetics

Back-to-school is upon us. Kids will be busy with school and all the extra activities this time of the year brings. Here are a couple of hot sandwich ideas that come in handy when you need a quick meal or snack to tide those hungry ones over until after the game, etc. Both of these recipes are suitable for diabetics.

The first recipe is for an open-faced version of the ever popular grilled cheese sandwich. Since it is open-faced, meaning it uses only one slice of bread, and calls for whole-wheat bread, it will fit into the diabetics diet easily. In this one recipe, you have grain, dairy, meat and vegetable all included. That's a pretty well-rounded recipe for a quick snack or meal.

OPEN-FACED GRILLED BACON-CHEESE SANDWICH

4 slices whole-wheat bread

1 tbsp butter

1/8 tsp garlic powder

4 slices American cheese

12 slices bacon, fried and drained on paper toweling

4 thick tomato slices

Melt butter in microwave and add garlic powder. Brush garlic butter on one side of each bread slice. Place bread in skillet or on griddle, buttered side down. Top each bread slice with a slice of cheese and three slices of bacon. Grill or fry over medium-high heat until bread is lightly browned and cheese starts to melt. Remove from heat and add a tomato slice on top of bacon.

Who doesn't love a good BLT? Try this recipe to liven up the usual sandwich. The seasoning mix sprinkled over the bacon gives an extra "kick" to this BLT. Diabetics, be sure you use whole-wheat bread that is thin-sliced.

SWEET AND SPICY BLT

Seasoning mix: 1 tbsp SPLENDA

1/4 tsp ground cayenne pepper

1/4 tsp garlic powder

1 tsp paprika

Combine all ingredients in a small bowl and mix well. May be stored in refrigerator in an airtight container or zip storage bag.

Sandwich: 12 slices lean bacon (or turkey bacon)

2 tsp seasoning mix (above)

8 slices whole-wheat bread, plain or toasted to suit your taste

2 tbsp fat-free ranch dressing

4 leaves of green lettuce

8 slices tomato

Place bacon on a microwave-safe plate or pan and top each slice with 1/2 teaspoon seasoning mix. Cook bacon in microwave according to package directions to desired doneness. Toast bread, if desired. Spread 1/2 tablespoon ranch dressing on 4 slices of the bread. Layer bacon-using 3 slices per sandwich, tomato and lettuce slices on bread and top with remaining bread slices.

Makes 4 sandwiches.

Chicken With Avocado Sandwiches and Avocado Bacon Sandwiches Recipes

Do you know that avocados make great sandwiches, but only if you know the right recipes. Avocado and chicken tortas, avocado bacon sandwiches and avocado chicken melt are 3 delicious avocado recipes you can learn to prepare.

Below are the recipes:

1. Avocado and Chicken Tortas

Ingredients:

- 1 fully ripened Mexican avocado
- 2 (6-inch) sandwich rolls (such as Portuguese or submarine rolls), halved
- Salt and freshly ground black pepper, to taste
- 8 ounces grilled chicken breast, sliced
- 1 cup shredded iceberg or romaine lettuce
- 1 tomato, sliced
- 2/3 cup mashed black beans, divided
- 1/4 cup pickled jalapeño pepper slices

Directions:

- Cut lengthwise around middle of avocado; twist avocado to separate halves; strike pit with a knife blade to remove; scoop out pulp with a spoon.
- In a small bowl, mash avocado.
- To assemble tortas: Spread mashed avocado on cut sides of rolls, dividing evenly.
- Sprinkle with salt and pepper. On bottom halves, layer sliced chicken, lettuce, tomato, black beans and jalapeño pepper slices.
- Firmly press tops of rolls on tortas.

Yield: 2 sandwiches

2. Avocado Bacon Sandwiches

Ingredients:

- 1/4 pound bacon slices, chopped
- 1 ripe avocado
- 1/2 teaspoon lemon juice
- Salt and pepper, to taste
- 3 tablespoons butter, softened
- 4 large slices whole wheat bread
- Lemon twist and parsley sprig, to garnish

Directions:

- Fry bacon until crisp. Drain on paper towels.
- Peel avocado, taking care not to remove bright green flesh just inside the skin.
- Cut in half and remove seed.
- In a bowl, mash avocado, then stir in lemon juice, salt and pepper.
- Butter two slices of bread.
- Spread avocado mixture on buttered sides of 2 bread slices.
- Scatter bacon over avocado.
- Cover with remaining bread slices, buttered sides down, and press together.
- Cut off bread crusts.
- Cut each sandwich into 4 triangles.
- Arrange on a serving plate, garnished with a lemon twist and parsley sprig.

3. Avocado Chicken Melt

Ingredients:

- 4 boneless skinless chicken breast halves
- 1/2 cup cornmeal
- 1 teaspoon garlic salt
- 2 tablespoons vegetable oil
- 1/2 firm ripe avocado, peeled and sliced thin, divided
- 1 cup shredded Monterey jack cheese
- 4 wheat bread slices, toasted
- 1/2 cup plain yogurt
- 1/4 cup chopped sweet red bell pepper

Directions:

- Rinse chicken with cold water and pat dry with paper towels.
- Place between two sheets of plastic wrap and pound to flatten to 1/4-inch thickness.
- In resealable plastic bag, combine cornmeal and garlic salt.
- Add chicken; close bag and toss to coat well.
- In large nonstick frying pan, heat oil.
- Cook chicken in hot oil for 2 minutes per side or until lightly browned.
- Remove chicken from pan and place in shallow baking pan.
- Place half of avocado slices over chicken and sprinkle evenly with shredded cheese.
- Bake at 350 degrees F for 15 minutes or until chicken is done and cheese is melted.
- Place each chicken breast on a slice of toast.
- Top with remaining avocado slices.
- In small bowl, combine yogurt and pepper; serve with chicken.

Yields 4 servings.
